Bamboo rice is a beautiful and natural short grain Rice.bamboo rice is collected by tribes and I got this rice from Gudalur (Nilgiris Mountain )area. Some species of bamboos only bloom with flowers once in 40 years , and die after floating.Thistime period is called “Bamboo Blossom “.
Bamboo Rice -250 Grms
Jaggery / country Sugar : 250 grms
egg-1 or 2
cardamom powder- 1/2 tspn
Fresh Coconut pieces- 1/2 cup
Wash and soak bamboo rice for 3 to 4 hours
Drain the water and add to a blender then pour some little water to blend well
transfer batter in to a bowl
Heat a pan
Add some water and allow it to boil
Add jaggery/country sugar in to water until dissolved
Filter and mix with the batter
Add half teaspoon Cardamom powder and 1/2 cup fresh coconut pieces in to that batter
keep it for 15 minutes
After that add one or 2 eggs in to that batter
Heat kuzhi paniyaaram pan and spray oil
Pore batter in each mould and allow to cook for 10 minutes
Turn and cook other side
Now the paniyaaram is ready if it has become crispy and dark brown color on both sides.
Nutritional and health value of bamboo is very high. Rich proteins.In this Recipe I have Used Egg instead of Black Gram .So , Vegans Can Replace Egg with Black Gram as well.
