Bitter Gourd/Bitter Melon Pickle

Pickling technology is a process of fruits or vegetables preserved in vinegar or brine, usually with spices or Salt or both.
Pickling Technology has been known since ancient times ,Pickles are still a popular food.

Health Benefits of Bitter Gourd/Bitter Melon:

Bitter gourd is a unique vegetable-fruit that can be used as food or medicine.

3.Lowers bad cholesterol levels
4.Boosts your immune system


Bitter gourd/bitter Melon-2
Gingelly oil- 1/4 ltr
Red Chilli powder- 2 or 3 tbsp(add more if you want it more spicy)
Roasted Fenugreek powder_ 2 tsp
Asafoetida powder/hing-1 tsp
Mustard seeds- 1 tsp
Sea Salt / kal uppu -According to taste
Vinegar-150 ml

Preparation Method:

First wash Bitter gourd and dry thoroughly.

Remove the seeds and cut in to small pieces.

Take a dry Glass / porcelain container add bitter gourd pieces and Sea salt.

mix well for 10 minutes.

Cover it and keep it under Sunlight for one day.

On the Next Day ,

Take a heavy bottom pan,And heat the oil.

Temper mustard seeds

Fry Asafoetida powder , fenugreek powder in a low medium flame.

Add red chilli powder to fry for a second .

Immediately Add the bitter guard pieces and saute for a while.

Do saute well for at least 15 minutes .

Add vinegar in this stage

Add it little by little and mix everything.

And Saute it till you reach pickle stage.

In this stage The oil will separate from the masala.

Store it a glass container.

leave it for 2 or 3 days .Then you can taste it.

The taste matures day by day.
