Easy Tomato Pickle

Pickling technology is a process of fruits or vegetables preserved in vinegar or brine, usually with spices or Salt or both. Pickling Technology has been known since ancient times ,Pickles are still a popular food. This Tomato pickle is very easy to prepare. No artificial Agents. Very few ingredients.

Ingredients:
Tomatoes – 4 or 5 (medium size)
Gingelly Oil – 50 ml
Fried fenugreek powder – 1 /2 tspn
Asafoetida powder – 1/2 tspn
Red Chilli Powder – 1 tspn
Lemon – 1/2
Needed Salt

Preparation Method
Wash and clean the tomatoes
Allow to get complete dry
Grind coarsly
Heat pan
pore 30 ml gingelly oil
add asofoetida powder & fenugreek powder
Allow to fry
Keep the stove flame in simmer
Add chilli powder & fry for few seconds
(Do not allow to burn. it will spoil the taste )
Add tomato puree
Add enough salt
Mix & saute well for few minutes
Close the lid And cook for 10 minutes in simmer
Open the lid after 10 minutes and squeeze half lemon
(Lemon acts a natural preservative )
Slowly it turns ticker to Jam consistency
Oil gets seperated in such stage
turn off the stove
Allow to get cool
transfer it in to a glass jar/ceramic jar
(use dry spoons)
Easy tomato pickle is ready to taste
