Nilgiri Green Kurma
Nilgiri is located in Southern part of India. Nilgiris Mountains refers to the greenery.
In another word Green kurma /Nilgiri kurma is made with fresh herbs to give a green hue and Aroma.
We can Use this Same recipe for both Veg or Non-veg (especially with Chicken ).Both are equally good in taste.
Nilgiri Veg/ Non-Veg Kurma Recipe
Cuisine: Nigiri/Tamil Nadu
Preparation Time: 10 Minutes
Cooking Time : 20 Minutes
Serves: 4-5 persons
Mixed Vegetables (washed)- 1 cup
(carrot,Bush Beans,Turnip,potato,Fresh Pees/Frozen Pees, Soya Chunks)
Large onions,Roughly chopped-2
Garlic -10 Numbers
Cinnamon- 1 inch
Grated fresh coconut-6-7 tbsp
White poppy seeds-1 tsp
Coriander leaves- 1 bunch
Mint Leaves-1 Bunch
Green Chilli- 3 or 4
Turmeric powder- 1 pinch
Salt- to taste
Ghee- 2 tsp
Cashew nuts-5 (optional)
Preparation Method :
Heat Ghee in a heavy bottomed vessel/cooker, Add the chinnamon,cardamoms.cloves fry it for five minutes .
Add chopped onions and fry till transparent. Add ginger & garlic and saute for 3 minutes.
Add green chillies along with Mint and coriander leaves. satue for 5 minutes .
Switch off the burner and transfer all in to a Mixie jar grind to paste
In that same vessel/cooker add all the vegitables saute for 5 minutes in a low flame .
Add the ground paste and cook over medium heat for 7-8 minutes.
Add pinch of turmeric powder
Add Salt to taste
Add 1 cup of water and cook with lid on simmer till the vegitables are cooked well .
Finally grind the coconut and poppy seeds and make a fine paste .
(cashews are optional .If you like you can add cashews also)
Add that paste in to that gravy .
Allow it to boil for 2 minutes
Finally add the lemon juice in to that gravy and switch off the flame .
Transfer it in to a serving bowl and granishing with fresh mint and coriander.
You can also use the same method of preparation for chicken .
